Bunny Face

Yield: 1 serving
Ingredients:
  • ½ of a whole wheat English muffin
  • 1 tablespoon low-fat strawberry cream cheese
  • ½ of a kiwi, gently rubbed under cool running water, peeled and cut in half
  • 2 small blueberries, gently washed under cold running water
  • 1 strawberry, gently washed under cold running water and cut in the shape of a triangle
  • 6 pretzel sticks

Directions:

  1. Wash hands with soap and water.
  2. Spread cream cheese on English muffin.
  3. Have your child decorate with blueberries for the eyes, strawberry for the nose, pretzel sticks for the whiskers and kiwi slices for the ears.

Egg and Cheese Muffin

Yield: 1 muffin
Ingredients:
  • 1 whole wheat English muffin, cut in half and toasted
  • 1 egg
  • 1 slice American or Cheddar cheese
  • Salt and pepper, to taste
  • Fresh spinach leaves, (optional)

Directions:

  1. Wash hands with soap and water.
  2. Gently wash spinach under cold running water. If spinach is marked "pre-washed" or "ready-to-eat", use the spinach without further washing.
  3. Spray a coffee mug or small bowl with non-stick cooking spray. Crack egg into mug and beat with fork.
  4. Wash hands with soap and water after cracking raw egg.
  5. Microwave egg for approximately 1 minute. (Cooking times may vary.)
  6. Remove cooked egg from mug and place on one half of the toasted English muffin. Place cheese slice on egg.
  7. Season with salt and pepper, if desired. Place fresh spinach leaves on top of cheese, if desired.
  8. Top with remaining half of English muffin.

Silly Sandwiches

Yield: 2 servings
Ingredients:
  • 1 whole wheat English muffin, 1 whole wheat bagel or 2 slices of whole wheat bread
  • 2 teaspoons ranch style dressing
  • ¼ cup shredded cheese or one slice of cheese
  • ½ cup grated or chopped vegetables such as red, yellow or green pepper, peas, beans, broccoli, celery, carrots, olives, tomatoes, summer squash ....

Directions:

  1. Wash hands with soap and water.
  2. Spread 1 teaspoon ranch dressing on each half of English muffin, bagel or slice of bread.
  3. Top with the cheese and vegetables to create a silly face.

Pizza Bites

Yield: 1 serving
Ingredients:
  • ½ English muffin
  • 1 Tablespoon pizza or tomato sauce
  • 2 Tablespoons mozzarella cheese, shredded
  • Optional toppings: sliced mushrooms, green peppers, onions, black olives or other vegetables*

Directions:

  1. Wash hands with soap and water.
  2. Spread English muffin half with pizza sauce.
  3. Sprinkle with cheese and add additional toppings if desired.
  4. Bake at 425⁰F for 10 minutes on a baking sheet or microwave for 15 seconds or until cheese is melted using a microwave-safe plate.
