Pumpkin is an excellent source of vitamin A and a good source of fiber.

Pumpkin Cake
Yield: 24 servings
Ingredients:
  • 1 (15 ounce) can pumpkin
  • 1 box spice cake mix
  • ½ cup water

Directions:

  1. Wash hands with soap and water.
  2. Preheat oven to 350 degrees F. Spray your choice of pan, (Bundt pan, muffin pan, or 10x15-inch baking dish for bars).
  3. In a large bowl, combine all ingredients until well blended. Pour into prepared pan.
  4. Bake for 15-20 minutes or until a toothpick inserted near the center comes out clean.
