Air Fryer Pork Chops with Mashed Sweet Potatoes
Yield: 8 servings
Ingredients:
For mashed sweet potatoes:
- 4 sweet potatoes (small to medium), scrubbed with clean vegetable brush under running water, peeled and cubed
- 1 Tablespoon fresh thyme, gently rubbed under cold running water OR 1 teaspoon dried thyme
- Salt and pepper to taste
For pork chops:
- 2 Tablespoons brown sugar
- 1 Tablespoon paprika
- 1 teaspoon fresh ground black pepper
- 1 teaspoon ground mustard
- 1 teaspoon onion powder
- ½ teaspoon garlic powder
- 2 teaspoons salt (optional)
- 4 pork chops
- Cooking spray
Directions:
- Wash hands with soap and water.
- In a large saucepan, bring water to a boil over high heat. Reduce heat to medium, add potatoes and cook for 20 to 25 minutes until potatoes are tender.
- Drain the water and place potatoes in a medium bowl.
- Mash potatoes using a fork or potato masher, and season with thyme, salt, and pepper if desired. Set aside and keep warm.
- In a small bowl, combine brown sugar, paprika, salt, pepper, mustard, garlic, and onion powder.
- Coat the pork chops with cooking spray on both sides. Sprinkle liberally with the spice mix and rub it well. Wash your hands with soap and water after handling uncooked meat.
- Set the air fryer to 400°F and preheat for 5 minutes.
- Place pork chops in an air fryer basket. Cook for 5 minutes, then flip and cook another 5 minutes or until the meat reaches an internal temperature of 145°F on a food thermometer. Set aside and let rest for 5 minutes.
- Serve with mashed sweet potatoes.
- Store leftovers in a sealed container in the refrigerator for up to four days.
