Banana Oatmeal Bread
Yield: 16 servings
Ingredients:
- 2 eggs
- ½ cup vegetable oil
- 1 cup brown sugar
- 2 large ripe bananas, gently rubbed under cold running water, peeled and mashed
- 1 cup quick cooking oats
- ½ cup fat free milk
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ teaspoon cinnamon
Directions:
- Wash hands with soap and water. Preheat oven to 350°F.
- Break eggs into a large bowl. Wash hands with soap and water after cracking raw egg.
- Add oil, brown sugar. bananas, oats and milk to eggs. Mix well.
- Add all-purpose flour, whole wheat flour, baking powder, baking soda, salt, and cinnamon. Stir together.
- Spray a 9x5-inch inch loaf pan with cooking spray. Pour batter into the pan. Bake in for 55-60 minutes or until toothpick comes out clean when inserted into the bread.
