No-Crust Pumpkin Pie

Ingredients (8 Servings)
  • 2 large eggs
  • 1/4 tsp. salt
  • 1 (15 oz.) can pumpkin puree
  • 1 3/4 tsp. pumpkin pie spice*
  • 1 c. non-fat dry milk
  • 1/4 c. all-purpose flour
  • 2/3 c. sugar
  • 1 c. water
Directions
  1. Preheat oven to 350oF. Spray a 9-inch pie plate with non-stick cooking spray. Set aside.
  2. In a large bowl, mix together all ingredients except water
  3. Slowly stir in water until well mixed. Pour into prepared pie plate
  4. Bake 45 to 55 minutes or until knife inserted 1-inch from the center comes out clean

*Substitute 1 tsp. cinnamon, 1/2 tsp. ginger, and 1/4 tsp. nutmeg for pumpkin pie spice if desired
