Hi Everyone!

This month's recipes are EXTRA SPECIAL. They're all from dietetic students, as a project for their Community Nutrition Class, taught by Dr. Zainab Rida. Students could select, make and do a post for my Cook It Quick Blog on a recipe that fit Cook It's Quick Newsletter guidelines.

Two previous recipes from Community Nutrition class students are the following. I was so impressed by their work, I asked if more students were interested. I think you'll be pleased with their recipes also!

Except for 2 recipes with 6 ingredients, all the recipes are made with 5 or less common ingredients (does NOT count water, salt, pepper and cooking oil).

Our goal is to make you "hungry for healthy food" by offering tips and delicious, quick-to-prepare, inexpensive recipes.

Preparing these recipes and using the tips will help you increase consumption of fruits and vegetables, whole grains, and low-fat dairy products. At the same time, you will reduce sodium, solid fats, and calories. Food safety tips are included.
