Food, Nutrition & Health
Eating a healthy diet can help in the prevention or management of several diet-related diseases. The Internet is filled with “dietary advice” and it can be hard separating the helpful from the harmful. In this section, we’ll help you choose foods that are good for your health. And, we’ll even help you purchase and prepare them, including a selection of easy-to-prepare, delicious and nutritious recipes.
Food Safety
Global food distribution has increased the need for improved food safety protocols. UNL is a valuable food safety resource for consumers, food service, temporary foodservice/farmers’ market vendors and food processors/manufacturers.

Meat Products
UNL is taking a fresh look at every muscle in meat animals and adding quality and value to meat from producers to consumers. Meat producers can find opportunities for training and helpful resources on our Web pages. Consumers will find information on how to prepare various meat cuts so the meat is both safe and delicious.
Home Food Preservation
Along with recent tough economic times and the increased popularity and access to farmers' markets and locally grown foods, there has been a surge of interest in home canning, freezing, and drying of foods. If you’ve never preserved food at home before or need a refresher course, we have lots of resources to guide you through the process.
Food Processing / Business Development
UNL Food Processing Center helps put new foods on the shelf. We can provide assistance with feasibility studies, market development, processing and packaging. UNL works with small start-ups and large international food companies.
Youth / 4-H
4-H provides lots of opportunities to learn about foods, nutrition, and food preservation. Learn about the many projects and activities that 4-H offers youth. And if you are an adult helping with a 4-H activity, find additional resources to use in the classroom, 4-H club meeting, or any event with kid.
