Turkey Caesar Salad

This turkey Caesar salad recipe, courtesy of the National Turkey Federation, is a delightful, refreshing way to serve leftover turkey.

When I tested this recipe,  I used a reduced calorie, store-bought Caesar Salad Dressing to save time, instead of making the recipe that came with the salad.

Turkey Mashed Potato Soup

This was my husband's and my favorite soup recipe from Thanksgiving turkey leftovers last year from among several. Maybe, because it is so easy to make and uses up so many leftovers.

Measuring food ahead Cranberry White Chocolate Oatmeal Cookie mix in a jar Baked Potato with Cheese and Broccoli Topping
Getting a Headstart on Holiday Food Preparation

I often get asked about making foods ahead for the holidays. Unfortunately, they sometimes don't taste as good after sitting, assembled, in the refrigerator overnight.

An alternative is to measure out the ingredients the day before, then assemble them on the Big Day.

Here are the mixings for a pasta salad that tasted much fresher when assembled a couple of hours before dinner.

Cranberry Oatmeal Cookies Mix

This scrumptious cookie mix from last year was such a favorite that I am repeating it!

It makes a great holiday gift! Get ahead of the holiday rush by making some now.

Prepare a few jars for yourself, also!

The next time you're tempted to have "just a bowl of cereal" for a quick lunch or supper, spend about a minute more and have this Yogurt Breakfast Parfait.

And, of course, it tastes good for breakfast, too!

This recipe is from the National Dairy Council.

Slow Cooker Pot Roast Soup

This recipe starts with boneless beef chuck shoulder pot roast. Added texture and color comes from the addition of broccoli slaw. Try it you'll like it! My family is definitely having this soup again!

This recipe is from the National Cattlemen's Beef Association.

Did you know, there are 29 cuts of beef that meet government guidelines for lean including the chuck shoulder pot roast in this recipe?

Mexicali Pork Chops with Black Beans

Here's a kicked-up version of Pork and Beans from the National Pork Board.

I froze individual servings of this recipe (minus the fat-free sour cream topping) and enjoyed them over the next month.

Today's pork is so much leaner than before and compares favorably to lean cuts from other meats. Check out the fat and calorie figures here.

Universal lid Slow Cooker  french bread pizza
Universal Lids - Do You Have
or Need One?

If you ever wondered if your food is still merrily simmering away or if it has come to a boil, you may need a "universal lid." They let you monitor food preparation without lifting the lid and releasing the heat, making the cooking process take longer.

These lids typically have several rings of ridges that let the lid fit over different sizes of pans. Some brands may cover pans from about 8" to 12" in diameter (as measured across the top of the pan).  I've bought  universal lids locally for under $15.00.

Are You Brewing Bacteria in Your Slow Cooker?

Few aromas are as welcoming as the smell  of dinner already cooking in a slow cooker at the end of a busy day.

Keep that good feeling going by following these recommended safe slow cooker practices from the U.S. Dept. of Agriculture Food Safety & Inspection Service.
