Turkey Caesar Salad


This turkey Caesar salad recipe, courtesy of the National Turkey Federation, is a delightful, refreshing way to serve leftover turkey.

When I tested this recipe,  I used a reduced calorie, store-bought Caesar Salad Dressing to save time, instead of making the recipe that came with the salad.

Turkey Mashed Potato Soup


This was my husband's and my favorite soup recipe from Thanksgiving turkey leftovers last year from among several. Maybe, because it is so easy to make and uses up so many leftovers.

Getting a Headstart on Holiday Food Preparation


I often get asked about making foods ahead for the holidays. Unfortunately, they sometimes don't taste as good after sitting, assembled, in the refrigerator overnight.

An alternative is to measure out the ingredients the day before, then assemble them on the Big Day.

Here are the mixings for a pasta salad that tasted much fresher when assembled a couple of hours before dinner.

Cheesy Broccoli Baked Potatoes

 
The fat content of this recipe is kept low by omitting the fat from the white sauce with the only fat in the cheese added to the white white sauce.

Slow Cooker Pot Roast Soup

 

This recipe starts with boneless beef chuck shoulder pot roast. Added texture and color comes from the addition of broccoli slaw. Try it you'll like it! My family is definitely having this soup again!

Mexicali Pork Chops with Black Beans


Here's a kicked-up version of Pork and Beans from the National Pork Board.

I froze individual servings of this recipe (minus the fat-free sour cream topping) and enjoyed them over the next month.

Today's pork is so much leaner than before and compares favorably to lean cuts from other meats. Check out the fat and calorie figures here.

 Universal Lids - Do You Have
or Need One?


If you ever wondered if your food is still merrily simmering away or if it has come to a boil, you may need a "universal lid." They let you monitor food preparation without lifting the lid and releasing the heat, making the cooking process take longer.

These lids typically have several rings of ridges that let the lid fit over different sizes of pans. Some brands may cover pans from about 8" to 12" in diameter (as measured across the top of the pan).  I've bought  universal lids locally for under $15.00.
